BRINJAL Semi Dry FRY: (Stuffed Eggplant).. mouth watering recipe

  BRINJAL Semi  Dry  FRY:

            One of my very favorite curry.. For all brinjal lovers try this receipe. Its
High on nutrients, brinjal has many health benefits and hence, you should consume it at least once a week.
                            
     



Ingredients:

·         Eggplant(brinjal)                 - 250gms
·         Peanuts powder                   - 2tb sp
·         sesame seeds powder             -1tsp
·         Fried gram                              -2tsp
·         Red chilly powder               -1tsp
·         Termeric powder                -1/2 tsp
·         Garam masala                     -2tsp
·         Onion                                 -2(finely chopped)
·         Salt to taste
·         Oil                                      -3tb sp
·         Taramind juice(optional)


Method:



  •      Take 250gms of brinjal preferably long..
  •       Split into 4 keeping the stem intact wuith or without
  •         Soak in salt water for ten minutes.
  •    Dry roast the peanuts first, when they start to become brown, add the sesame. roast them till browned and smell fragrant. you can also roast them separately.
  •      Add roasted peanuts, sesame seeds and fried gram to grinder  to make fine powder.
  •       Take a bowl add prepared powder, red chilly powder, salt, garam masala, turmeric, and 1 tbsp oil.. add tarmind juice(Optinal). Mix well. Don’t add water.
  •          Remove brinjals from water and stuff the mixed powder in them.

                  



  •        Heat 4spoons of oil in the fry pan ,add chopped onions, fry for 2 to 3 mins.




·         Then add the brinjals to the pan .let them cook for a few minutes with a lid on under medium flame(5 mins).



  • ·         Cook them on both sides.then check if they are cooked.

                                  



  •    Once the brinjals are cooked add the remaining paste to the pan and add 2tb sp of water and mix well.
  •        Let them cook for another 5 mins till the oil comes out.
  •        Finally transfer to a bowl and serve with chapati, roti or with hot rice.
