Ghorikai Uppakari

Ghorikai Uppakari

Ingredients:
  • 500 gm cluster beans/ ghorikai
  • 2tbsp  oil
  • 1tsp  mustard seeds
  • 1tsp  channa dal
  • 6-8 red chillies
  • 10-12 curry leaves
  • 1/2 tsp  asafoetida/hing
  • 4-6  green chillies
  • 1tbsp  coconut
  • Salt

Method:
  • Cut the beans into fine slices, blanch and set aside.
  • Grate the coconut and slit the green chillies.
  • Cut the red chillies into 1/2 inch pieces.
  • Heat oil in a pan and add the mustard seeds, when crackling, add the dal. When the dal turns golden in color add the curry leaves, asafoetida and green chillies and saute for 1 minute.
  • Add the beans and the salt. Sprinkle 1/4cup of water, cover and cook on a low flame.
  • When the beans are done, add the coconut and stir for 2 minutes.
