Uppittu:(A spicy variant is known as Kharabath)
Upma or Uppittu is a common South Indian breakfast dish, cooked from dry roasted semolina or coarse rice flour. Various seasonings and/or vegetables are often added during the cooking, depending on individual preferences.

Ingredients:
- 1 cup Semolina/Rava
- 3 tbsp oil
- 1/2 tsp Mustard seeds
- 1 tsp Cumin seeds
- 1/2 tsp grated Ginger
- 3-5 Green chillies ( chopped)
- 1 onions ( chopped)
- Salt to taste
- Vegetables of choice: Peas, carrots, tomatoes, capsicum, etc.
- 3-4 tbsp Grated coconut ( optional)
- 2 tsp Lemon juice ( optional)
Method:
- Dry-roast Semolina/rava until it just begins to turn brown, then keep aside.
- Heat oil in a pan .
- Add mustard seeds and wait for them to sputter. Then add cumin, ginger, curry leaves ,green chillies and chopped onions and fry few sec.
- Add vegetables, salt and 2 cups of water, and bring to boil.
- Add the roasted rava, turn down the heat, and mix quickly to avoid lumps forming.
- The upma is done when all the water is absorbed by the rava.
- Garnish with grated coconut, chopped coriander leaves and lemon juice.
