Rava kesaribath / Halwa:(sooji/semolina)





Ingredients:
  • 1/2 cup                  Rava (Sooji /semolina)
  • 1/3 cup                  Ghee 
  • 1¼ cups                Water/milk
  • 1/2 cup                  Sugar
  • 5                            Almonds (badam), sliced
  • 5                            Cashew nuts (kaju), chopped
  • 10                          Raisins   
  • 1/4 tsp                   Cardamom Powder
  • 1/4 tsp                   kesar/safforn 

Method:
  • Melt ghee  in a heavy bottomed pan.Add nuts and then raisins and roast until very lightly colored.
  •  Now add sooji and roast on low flame heat until lightly colored and fragrant.
  • Add sugar , cardamom powder and water/milk , increase heat to medium.
  • When most of the water is absorbed, add a pinch of salt and saffron if using.Stir in gently and cover with a lid.
  • The sooji halwa is now ready for serving.
